2 cups GF baking mix
2 cups white sugar
½ cup powdered sugar
1/3 cup lemon juice
1 cup margarine or butter flavored Crisco
¼ cup GF baking mix
½ teaspoon GF baking powder
4 eggs
For bottom crust:
Sift 2 cups baking mix and powdered sugar together. Cut in margarine until mixture clings together. Press into 9”x13” pan; bake at 350 degrees for 20-25 minutes until light brown.
For topping:
Beat eggs, sugar and lemon juice thoroughly. Stir together dry ingredients and stir into egg mixture. Pour over baked crust and bake at 350 degrees 20-25 minutes longer. DO NOT OVERCOOK.
Forms a thin, crisp crust on top of lemony center. Sprinkle with additional powdered sugar. Cool and cut into bars.
