2 gallons of large peeled and seeded cucumber rings sliced to ¼ to ½ inch thick
Combine: 8 ½ qts of water, 2 C. household lime.
Pour over cucumbers and let stand 24 hours.
Drain and wash well. Soak in cold water for 3 hours. Drain.
Combine: 1 C. vinegar, 1 T alum, 1 oz. red food coloring, and enough water to cover.
Simmer 2 hours, then drain and throw away water mixture.
Make a syrup of: 4 C. vinegar, 10 C. sugar, 2 pkgs of red hots, 4 C. water, 8 sticks of cinnamon.
Pour over rings and let stand overnight. Drain and reheat syrup for 3 days. On the 4th day, reheat syrup and pack in jars and seal. Makes 12 pints.
