2 C. Fleatherlight Mix ½ C. White Sugar
1 tsp. Xanthan Gum 1 C. Brown Sugar
1 tsp. Cinnamon 1 C. Butter
¼ tsp. Nutmeg 2 Eggs
1 tsp. Baking Powder 2 C. Quinoa Flakes
¼ tsp. Baking Soda 1 C. Raisins
½ C. Chopped Nuts (optional)
Whisk together flour mix, xanthan gum, cinnamon, nutmeg, baking powder & baking soda. In mixing bowl cream butter & sugars. Beat in eggs until smooth. Blend in flour mixture.
Stir in Quinoa flakes, raisins & nuts.
Bake at 350 degrees for 10 – 11 minutes.
