½ c melted butter
½ c date sugar
1 egg
½ c rice flour
½ c soy flour
½ c sliced almonds
1 t vanilla
Preheat oven to 375o. Mix butter, sugar, egg, and vanilla in a small mixing bowl. Combine flour and almonds with liquid ingredients. Scoop small spoonfuls onto ungreased cookie sheet. Bake 10-12 minutes. Makes 1-2 dozen depending on the size of your spoonfuls. Enjoy!
