Mix together and set aside:
2 C. brown rice flour
2/3 C. potato starch flour
½ C. tapioca flour
Other ingredients: 1/3 C. butter
1 t baking soda 1 1/3 C. brown sugar
1 t xanthan gum 2 eggs
½ t baking powder 1/3 C. milk
½ t cinnamon 1 C. pumpkin puree (Libby)
¼ t cloves
1/8 t nutmeg
Pinch of ginger
Lightly grease loaf pan. Dust with rice flour. Cream butter. Add sugar and eggs. Beat well. Add ½ of dry mixture, beat well. Add rest of dry mixture, alternating with milk. Can make 2 smaller loaves or one large one. Bake at 350 for 1 hour (large) or 45 min. (small).
