1 egg
¼ cup melted butter
1 1/3 cup G/F flour (I used 1 cup brown rice flour + 1/3 c. corn starch)
¾ teaspoon baking soda
½ teaspoon baking powder
½ teaspoons salt
7/8 cup granulated sugar

Mash up the bananas.  Then beat the egg and add sugar; beat well.  Add the mashed bananas.  Sift the dry ingredients together and blend into first mixture; add the melted butter.  Bake in muffin tins 20 minutes at 350 degrees.
