GF JANUARY 2009 MEETING DATE NOTIFICATION
Greetings to all our gluten free friends!
The purpose of this interim newsletter is to let you know that our next meeting will be January 31, 2009, at Lutheran Church of Hope, 925 Jordan Creek Parkway , West Des Moines . We will arrive at 11:30 so we can organize the food tables and eat promptly at 12:00 noon.
There are just a few other details I want to share with you before our next regular meeting and newsletter. There will be a gluten free tasting at the Fleur Hy-Vee ( 4605 Fleur Drive ) on January 7 from 3-7 pm. Go to the club room. A 10% discount on health products will be offered that day. They will have pizza, desserts, mixes, etc. We all appreciate the efforts of our Hy-Vees! Anne Cundiff is the dietitian at that store.
There are some new products out that are really superb. They are made by Kristy’s Kitchen out of Tecamah , NE. www.kristyskitchen.com. “We have created mixes that offer a variety of unique and creative mixes, as well as basic favorites. Blueberry Sour Cream Coffee Cake/Muffin Mix, Apple and Spice Pancake/Waffle mix, and our #1 most popular mix, an Artisan Graham Cracker Mix are on the unique side, while our #2 ‘Whole Grain’ Sandwich Bread Mix, and Grandma’s Sunday-best Biscuit Mix are wonderful, basic mixes.” I have made a graham cracker crust with the graham mix, and made the apple and spice pancakes. How awesome! Some of these products are sold at the Fleur and Ankeny Hy-Vees.
The Shabtai Gourmet products we sampled at the last meeting are being sold at the Hy-Vees on 35th St. , WDM, and Mills Civic in WDM.
The GF pizza at Godfather’s in Ankeny is going well, and they are selling the Red Bridge beer as well!
We now have copies of the DVD from the presentations by Dr. Fasano last June. The information is completely current and very educational about Celiac Disease. Most of the literature says we are now 1% of the population!!! If you are interested in purchasing the 2 DVDs they cost $15, (one from the public presentation and one from the medical grand rounds presentation). It is a set, and there is different information on each DVD. The money we collect covers the cost of the DVDs and any left will go into our group fund to help cover expenses of the luncheons. Please email or call me to get your copy. I will also bring them to the next luncheon if there are any left.
A recipe from the last luncheon was left out of the newsletter because it was received too late. I am including it now because several people inquired about it. I think you had better bring this one again, Crystal !
ALMOND CAKE Crystal Bye
2/3 cup of sugar
1/2 cup of almond flour
1/2 tsp baking powder
1/4 tsp salt
2 large eggs (separated)
1 stick of butter (softened)
8 oz almond paste (cut into small pieces)
½ tsp vanilla extract
Preheat oven to 350.
Line bottom of 9 inch pan w/ parchment paper and coat paper and sides of pan w/ butter. Set aside.
Combine sugar almond flour, baking powder, and salt in medium bowl. Stir to mix well and set aside.
Place egg whites in large bowl and beat at high speed w/ an electric mixer until soft peaks form. Set aside.
Place butter in bowl and beat at medium speed until fluffy. Beat in almond paste a few pieces at a medium, until smooth. Reduce to medium speed and gradually add sugar mixture. Add Yolks and beat until smooth batter forms. Beat in vanilla. Fold in egg whites. Smooth batter in pan and bake for 25-30 minutes or until lightly brown. Remove from pan immediately to wire rack.
